Japanese flavors blending with signature California influence by Chef David at ADRIFT KAYA, JW Marriott, New Delhi
It was Chef David Myer's aka @GypsyChef at Adrift Kaya, JW Mariott, New Delhi's most anticipated return. He didn't disappoint as usual, sizzling the palate of seasoned travelers of Delhi with a new menu that blended the Japanese flavors with his signature California influence. Delhi had fun with the delicacies prepared fanatically by chef Myres inspired from his taste and travel experiences as he went about observing the intricate details and expressing it in the dishes with his own signature dishes. They were an absolute joy to the diners while being a visual delight.
This new menu highlights included Shishito Peppers with Hokkaido sea salt, Fried Oyster Tonkatsu with Gabriche sauce, and cold dishes like oysters with chopped Negi and ponzu, sweet prawns with Yuzu Kosho, and salmon belly. Tempura options feature red snapper with coriander salad and hot ten tsuyu with grated radish, while the Robata and Yakitori selection includes King Crab with Ponzu, lobster with Lemon Miso Butter, and Braised Red Snapper with yuzu kosho.

The restaurant is introducing the Majicha Tea embodying meticulous craftsmanship and a rich cultural heritage using traditional methods. The tea leaves, nurtured by Kyoto's climate, ensure the highest quality in every brew. The tea is sourced from an exclusive partnership with the oldest tea company in Japan and the tea company that sells to the royal family. Rich in antioxidants and amino acids it is a must if you are health consious.
